Here at Oily Pig we’ve had a lifelong passion for good food and wine (who hasn’t!) and that enjoyment was taken up a gear when we discovered the taste sensation that is Iberian Ham also known as Jamon Iberico.
After purchasing several packs of sliced Iberian Ham, we decided to bite the bullet and buy a whole leg – quite an investment in terms of both cost and kitchen storage, let alone the dedicated stand and specialist knives needed to carve it! However, it did mean that we could indulge for several weeks as we watched our delicious ham dwindle in size by the day.
While enjoying the last of the meat, we wondered what would happen if we used the excess fat for cooking. To our delight, we found that this imparted all the aromas, textures, and tastes of the ham itself. At this point we kicked ourselves for not having thought of this sooner!
Through some trial and error, we soon discovered a way to bottle this flavour, giving us the ability to enjoy the flavours of Jamón Iberico for longer whilst also preventing excess waste.
We loved experimenting with different recipes, dressings, and even just enjoying our oil on bread, and so The Oily Pig was born!
